This unique beer is a soured ale, with a malt bill of 50% barley and 50% wheat. It also contains salt to balance out the tartness of the souring. Typically goses are kettle sours, meaning that they are inoculated with lactic acid bacteria in the kettle before fermentation. For this beer we've experimented with Lallemand's Philly Sour, a new yeast strain that produces lactic acid during fermentation. What results is an easy-drinking light flavoured sour that's easy on the palate and a great entry point into the world of sour beers.
